Ingredients:

  • 1 pound dry pasta (I used farfalle)
  • 1 pint fresh strawberries, hulled and halved
  • 1 ball fresh mozzarella, diced
  • 1/2 cup loosely packed torn fresh basil
  • 3 tablespoons balsamic glaze (I used DeLallo, but see instructions below for a homemade alternative)

Ingredients:

Salad:

  • 6 cups fresh arugula, loosely packed
  • 2 cups halved seedless grapes, red or green or a mix
  • 1 avocado, peeled, pitted and diced
  • 1/2 cup crumbled goat cheese
  • 1/2 cup chopped toasted walnuts or pecans
  • half a small red onion, peeled and thinly sliced
  • balsamic vinaigrette (ingredients below)

White Balsamic Vinaigrette:

  • 1/3 cup extra virgin olive oil
  • 3 Tablespoons white balsamic vinegar (or traditional balsamic vinegar)
  • 2 Tablespoons honey or agave nectar, to taste
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly-cracked black pepper

Bulgur Salad with Cherry Tomatoes, Cucumber and Spinach

Ingredients:
  • 1 cup of dry bulgur – cooked as per package instructions.
  • 1 bouillon cube
  • 4 cups baby spinach – about half a 6 oz bag – roughly chopped
  • 1½ cups cherry tomates – sliced in half or quarters depending on size
  • 1 cucumber – peeled, seeded and diced
  • 2 tbs red onion – minced
  • 2 oz feta – diced
  • ½ cups or 1 large handful of walnut pieces
  • 4 tbs olive oil
  • 2 tbs red wine vinegar
  • 1 clove of garlic put through a press
  • 8 twists of black pepper from a pepper mill

  • 2 cups quinoa, cooked
  • 2 oz pea shoots
  • 1/2 red onion, sliced
  • 4 oz cherry tomatoes, diced
  • 10 oz Cascadian Farm organic sweet peas, frozen
  • 1/3 cup raw sunflower seeds

Dressing

  • 1 tbs Dijon Mustard
  • 1/4 cup rice wine vinegar
  • 2 tbs extra virgin olive oil
  • 1 tbsp honey, maple syrup for a vegan version
  • 1/2 tsp ground fresh black pepper

6 or 7 hard boiled eggs (diced)

1 small onion (finely diced)

1 cup  mayonnaise

1 tsp cream-style horseradish sauce

2 – 7 oz packages of Hormel Pepperonis, cut in half and then in quarters

1 package – Cotto Salami, chopped (or any salami you like)

2 – 12 oz boxes of Rotini Pasta (I used Tri-Color)

Olive oil

2 packets of Italian dressing mix

2 medium sized canned, sliced black olive (drained)

2 medium red onion, chopped

2 orange bell peppers, chopped

2 red Bell Peppers, chopped

2 yellow Bell Peppers, chopped

2 10 oz packages of Grape tomatoes, washed
