Ingredients:
  • 2 lbs white fish (Rock-fish or Orange Roughy preferred), cut into strips
  • 12-15 small flour or corn tortillas
  • 1 quart oil for frying

Batter

  • 1 sleeve of Ritz crackers, crushed
  • 1 1/2 cups Bisquick
  • 1 cup Panko bread crumbs
  • 1 egg, lightly beaten
  • 1 teaspoon of creole seasoning
  • about 1/2 can of Sprite

Creamy Creole Sauce

  • 1/2 cup mayonnaise
  • 1 cup plain yogurt
  • juice of 1-2 limes
  • 1-2 tablespoons creole seasoning

Garnish

  • shredded cabbage
  • diced tomatoes
  • salsa
  • cheese
  • limes
